Ingredients
2 Cups flour
2 Tablespoons sugar
4 Teaspoon baking powder
½ Teaspoon salt
2 Large eggs at room temperature
2 Cups milk, at room temperature
2 Tablespoons butter, melted and cooled (melt butter in microwave. Let it cool in microwave)
Blueberries optional
Directions
1. In a large bowl, sift (see photo) together the flour, sugar, baking powder and salt.
2. In a separate bowl stir the eggs into the milk.
3. Pour the wet ingredients into the dry, stirring to make a smooth batter.
4. Stir in cooled melted butter. (If using blueberries add now ¾ cups)
5. Heat a fry pan or griddle over medium high heat and lightlygrease.
6. Using a ½ cup measuring cup to transfer the batter to the pan.
7. Cook a few minutes, turning once.
8. Continue with the remaining batter. (keep finished pancakes warm in low oven)
